铜锣烧 Dorayaki



材料 Ingredients:
140g 低筋面粉 Cake Flour
1/2tsp 发粉 Baking Powder
80g 糖 Sugar
2pcs 鸡蛋 Eggs
1tbsp 蜂蜜 Honey
1tbsp 溶化牛油 Melted Butter
5tbsp 牛奶 Milk

做法 Method:
1.  将鸡蛋和糖搅拌均匀后,加入蜂蜜和溶化牛油,拌匀。
 In a large bowl, combine eggs and sugar. Add in honey and melted butter, mix well.

2. 筛入低筋面粉和泡打粉,并搅拌均匀。(搅拌至无颗粒即可,切勿过度搅拌)
Sift flour and baking powder into the bowl and mix all together.

3.  放入冰箱冷藏约15分钟。
Keep in the fridge to rest for 15 minutes.

4. 从冰箱取出后,一匙一匙的加入牛奶调整浓稠度,至成表面光滑,滴落下来痕迹很快消失的面糊即可。
Take out from fridge and add in milk one tbsp by one tbsp until the batter is smooth. 

5.  以小火预热一个不粘平底锅,用厨房纸巾抹上少许食油。
Heat a non-stick frying pan over low heat. Dip a paper towel in cooking oil and coat the bottom of the pan with the oil.

6.  舀一汤匙面糊入锅中,以小火煎至底部上色后翻面,煎至两面熟透后取出待凉。
Pour a scoop of the batter onto the pan, when the surface of the batter starting to bubble, flip onto the other side and let it cook till done.Once done, remove the dorayaki pancake from the pan and let it cool.

7.  取一片饼皮,抹上适量馅料,用另外一片饼皮盖上,稍微压一下即可。
Scoop a heaping spoon of filling and place it in the center of the one the pancakes. Slightly spread the red bean paste to the side, but ensuring the center is slightly higher. Sandwich with another piece of pancake, gently pieces together. Ready to serve.
