咖哩猪肉 Curry Pork
材料 Ingredients:
三层肉 (切块) Pork Belly
排骨 Pork Rib
马铃薯 Potato
腐竹 Dried Beancurd Stick
蒜米 Garlic
红葱仔 Shallot
咖哩叶 Curry Leaves
英国咖哩粉 Watch Brand Curry Powder
椰浆Coconut Milk
做法 Method:
1. 将蒜米和红葱仔搅碎,备用。
Blend or chop garlic and shallot, set aside.
2. 腐竹浸软沥干,切小段,备用。
Soak dried beancurd stick until soft, drain cut into smaller piece, set aside.
3. 马铃薯洗净去皮,切块,炸至微金黄色,备用。
Wash and peel the potato, cut into large cube and deep fry till golden brown, set aside.
4. 锅内放入适量油,放入蒜米和红葱仔爆香。
Heat some cooking oil in a wok and saute shallot and garlic till fragrant.
5. 放入咖哩叶,炒香。
Put in curry leaves, stir fry till fragrant.
6. 放入三层肉和排骨,倒入咖哩粉,炒至干香,熄火
Add in pork belly, pork ribs and curry powder, stir fry until aromatic,
7. 把除了椰浆外的所有材料放入锅,加入适量水,煮至肉熟透。
Put all the ingredients except coconut milk into a pot and pour in suitable amount of water, bring to a boil and simmer till the meat is tender.
8.加入少许盐和糖调味,倒入椰浆,搅拌均匀,即可。
Add in a pinch of salt and sugar to taste, pour in coconut milk, stir well.
