爆蒜芝士蒸虾 Cheesy Prawn with Garlic (Steamed)







材料  Ingredients:
虾    Prawn
芝士片     Cheese Slice
蒜米     Garlic




做法 Method:
1. 将虾去壳去去肠留尾,排在蒸盘上备用。
 Peel and devein prawn without removing the tails, place in a steaming plate.

2. 蒜米剁碎,备用。
Chop garlic.

3. 热锅,放入少许油,将蒜米爆香至稍微金黄色,加入少许酱青炒匀。(这次酱青刚好完了,所以只好以酱油代替,出来的成品黑黑的)
 Heat wok, put in a little cooking oil and saute the garlic till slightly golden brown, add in a bit of light soy sauce and stir evenly.


4. 将蒜米铺在虾上面,在铺上切成条状的芝士片。
Spread the garlic onto the  prawn, then lay the cheese slices on the top of prawn.


5. 水滚后,以中火蒸7-8分钟即可。
Steam over medium heat for 7-8minutes .

创意三文治 Creative Sandwich  



材料 Ingredients: 
厚面包片    Thick Toast
鸡蛋     Egg
火腿     Ham
芝士片     Cheese Slice


做法 Method:
1. 在距离面包边约1.5cm处用刀划一个方形,小心取出中间的面包。

2. 平底锅内放入少许牛油,融化后,放上面包片。

3. 在凹洞中倒入一个鸡蛋。

4. 铺上火腿。

5. 再铺上芝士片。

6. 盖上芝前取出的面包,稍微压扁。

7. 翻面煎片刻,即可。

家常炒面





材料:
红葱仔
肉碎
包菜



做法:
1. 红葱剥去褐色外皮后切片,备用。

2. 包菜洗净去梗,撕成小片。

3. 将面烫软过冷水沥干,备用。

4. 锅内倒入适量油,烧热,放入红葱爆香。

5. 放入肉碎,翻炒至变色。

6. 加入包菜,翻炒片刻,放入适量盐调味。

7. 放入面条,炒匀即可。

咖哩猪肉 Curry Pork




材料 Ingredients:
三层肉 (切块) Pork Belly
排骨 Pork Rib
马铃薯 Potato
腐竹 Dried Beancurd Stick
蒜米 Garlic
红葱仔 Shallot
咖哩叶 Curry Leaves
英国咖哩粉 Watch Brand Curry Powder
椰浆Coconut Milk

做法 Method:
1. 将蒜米和红葱仔搅碎,备用。
Blend or chop garlic and shallot, set aside.

2. 腐竹浸软沥干,切小段,备用。
Soak dried beancurd stick until soft, drain cut into smaller piece, set aside.

3. 马铃薯洗净去皮,切块,炸至微金黄色,备用。
Wash and peel the potato, cut into large cube and deep fry till golden brown, set aside.

4. 锅内放入适量油,放入蒜米和红葱仔爆香。
Heat some cooking oil  in a wok and saute shallot and garlic till fragrant.

5. 放入咖哩叶,炒香。
Put in curry leaves, stir fry till fragrant. 

6. 放入三层肉和排骨,倒入咖哩粉,炒至干香,熄火
Add in pork belly, pork ribs and curry powder,  stir fry until aromatic,

7. 把除了椰浆外的所有材料放入锅,加入适量水,煮至肉熟透。
Put all the ingredients except coconut milk into a pot and pour in suitable amount of water, bring to a boil and simmer till the meat is tender.

8.加入少许盐和糖调味,倒入椰浆,搅拌均匀,即可。
Add in a pinch of salt and sugar to taste, pour in coconut milk, stir well.

自制奶酪鸡块 Homemade Chessy Chicken Nugget




材料 Ingredients:
 250g     鸡肉碎 Minced Chicken Meat
1/2tbsp     栗米粉 Corn Flour
3/8tsp     盐 Salt
1/2tsp     糖 Sugar
胡萝卜(刨幼丝) Carrot (Shredded)
马苏里拉奶酪(切小丁) Mozarella Cheese (Cut into cube)

沾粉 Coating:
鸡蛋 (打散)     Egg (Slightly beaten)
栗米粉     Corn Flour
面包糠    Bread Crumb



做法 Method:
1. 将鸡肉碎加入盐、糖和栗米粉搅拌至起胶。
 Add salt, sugar and corn flour to minced chicken meat and stir until it turns sticky.

2. 加入萝卜丝,拌匀,放入冰箱腌制数小时或隔夜。
 Add in shredded carrot, mix well, marinates the meats for few hours or overnight in fridge.

3. 将腌制好的鸡肉碎分成小分, 包入马苏里拉奶酪搓圆。
Divide the minced chicken meat into small portions, wrap in mozzarella cheese and shape into a ball.

4. 依序沾上栗米粉、蛋液和面包糠,稍微按扁。
Dip the nugget in sequence of corn flour to egg then lastly coat with bread crumbs, press slightly.

5. 将鸡块放入热油炸至熟,即可。
Deep fried the nugget till cooked.

牛油芝士蛋糕 (蒸) Butter Cheese Cake (Steamed)




材料 Ingredients:
A
60g     车达芝士 Cheddar Cheese
80g     忌廉芝士 Cream Cheese
80g     牛油 Butter
120ml     牛奶 Milk

B
3nos     鸡蛋 Eggs
100g     糖 Sugar

C
200g     自发面粉 Self Raising Flour


做法 Method:
1. 将材料A隔水加热至全部融化,待凉。
Heat ingredients A using double boiler until dissolved, set aside.

2. 将材料B搅拌至稍微浓稠, 加入 (1),拌匀。
Beat ingredients B until thick, add in (1), , mix well.

3. 筛入材料C, 搅拌直无颗粒。
Sift in ingredients C and mix well.

4. 将面糊装入蛋糕模,以中火蒸约10分钟或至熟。
Pour the batter into the cake molds, steam over medium heat for about 10 minutes or until cooked.

美禄炼乳蛋糕 (蒸) Milo & Condensed Milk Cake (Steamed)





材料 Ingredients:
150g     牛油     Butter
90g       糖     Sugar
5pcs     鸡蛋     Eggs
150g     自发面粉      Self Raising Flour
3tbsp    炼乳     Condensed Milk
3tbsp    美禄粉     Milo Powder



做法 Method:
 1. 将自发面粉过筛,备用。
Sieve self raising flour, place aside.

2. 将牛油和糖打发。
Cream butter and brown sugar till fluffy.

3.  加入鸡蛋(每次一粒),拌匀。
Add in egg one at a time, beat well.

4. 拌入自发面粉,搅拌均匀。
Fold in self raising flour, mix well.

5. 将面糊分成两份,一份加入炼乳,另一份加入美禄粉,拌匀。
Divide the batter into two portions, add condensed milk into one portion and add Milo powder into another portion, mix well.

6. 将面糊交替放入蛋糕模,以中火蒸10分钟或至熟。
Pour the batter into cake molds, steam over medium heat for 10 minutes or until cooked.

自制淡奶 Homemeade Evaporated Milk




1. 以双层锅不加盖的方式将牛奶加热。
Using a double boiler, heat the milk uncovered with the water boiling vigorously.

2. 不时搅拌牛奶,加热至牛奶的份量剩下一半。
Stir the milk from time to time, reduce the milk by at least 1/2.

3. 熄火后将淡奶过滤。
Remove the milk from heat and strained.

4. 淡奶冷却后即可装入干净的罐子,放入冰箱。
Once the milk is completely cooled, pour it into a clean container and keep in the fridge.

自制炼乳 Homemade Sweetened Condensed Milk



材料 Ingredients:
250ml     牛奶 Milk
100g       白糖 White Sugar



做法 Method:
1. 把全部材料放入厚底锅,以中小火煮至滚。
In a heavy-bottom pot, bring the milk and sugar to a boil over medium low heat.

2. 转小火煮至稍微浓稠,需经常搅拌以避免底部烧焦。
Reduce the heat to low and cook until slightly thicken, stir frequently to avoid burnt. 

3. 待凉后即可装入干净的容器,放进冰箱。
Remove the pot from heat and let the milk cool, transfer the milk to a clean container and keep in the fridge.

牛奶燕麦粥 Milky Oat Porridge



材料 Ingredients:
5tbsp     燕麦片     Rolled Baby Oat
150ml     清水     Water
150ml     牛奶     Milk
2tsp     糖     Sugar
1/8tsp     盐     Salt


做法 Method:
1.  锅内放入清水和燕麦,搅拌均匀,以小火煮至滚。
 Combine rolled baby oat and water in a pot over low heat and bring to a boil.

2. 倒入牛奶,加入糖和盐,不停的搅拌,以小火煮至熟。
 Add in milk, sugar and salt, stir nonstop and cook over low heat till done.

烤番薯 Baked Sweet Potato



材料 Ingredients:
番薯     Sweet Potato



做法 Method: 
1.  将番薯洗净,沥干,排在双面锅上。
Scrub the outer skin of the sweet potato,  drain and arrange on Happy Call Pan.

2. 洒上少许水,盖紧锅盖,以小火烤,每5分钟左右翻面一次。
Sprinkle some water, lock the cover and cook over low heat. Flip every 5 minutes. 

3. 烤约20分钟,或至能用叉子插进去。
Bake for about 20 minutes, or until the sweet potato feel soft inside when poke with a fork.

Cheese Sticks 芝士棒





材料 Ingredients:
1cup      自发面粉     Self Raising Flour
30g      冷牛油     Cold Butter
1/2cup     刨丝车达芝士     Grated Cheddar Cheese
3tbsp     牛奶     Milk


做法 Method:
1. 将自发面粉过筛到一个大碗。
Sieve self raising flour into a big bowl.

2. 将冷牛油切成小块,加入自发面粉里,用指尖揉成像面包糠的颗粒状。
Cut butter into small cube, add into self raising flour and rub until mixture resembles breadcrumbs.

3. 加入芝士,混合均匀。
Add in grated cheddar cheese, mix well. 

4. 倒入牛奶,揉成面团。
Pour in milk, continue mixing until dough forms.
 
5.  将面团杆平,切成条状。
Roll dough into a flat sheet and cut into stripes.

6. 稍微拧成麻花状,摆放在已铺上烘焙纸的烤盘。
Gently twist strips and put on a baking tray. 

7. 放入预热烤箱, 以160度烤15-20分钟或至金黄色。
Put into pre heat oven, bake at 160 Celsius for 15-20 minutes or until golden brown.
