酿苦瓜汤 Stuffed Bitter Gourd Soup







 天热食苦,胜似进补
这样的大热天
最适合来碗酿苦瓜汤了



材料 Ingredients:
苦瓜   Bitter Gourd
肉碎   Minced Pork
薯粉   Tapioca Starch
枸杞   Goji Berries

肉碎腌料 Pork Marinades:
鸡蛋  Egg
蒜末  Minced Garlic
盐      Salt



做法 Method:
1. 将肉碎加入腌料,放入冰箱腌隔夜。
 Marinate the minced pork overnight in the fridge.

2.  将苦瓜洗净,去头尾,切成小段,再用汤匙挖空中心的瓤和籽。
Rinse bitter gourd,  cut into thick rings and remove the seeds with a teaspoon.

3.  锅中放水,加入少许盐和食油,水烧开后放苦瓜段焯水两到三分钟,捞起沥干。
Bring water to a boil, add in some salt and cooking oil,  quick boil the bitter gourd for 2-3 minutes, drain well.

 4. 在苦瓜段内壁抹上一层薯再酿入肉馅,压紧,使肉馅填塞紧密。
Apply a layer of potato starch inside each bitter gourd rings and stuff with marinated minced pork.


5. 把剩下的肉馅揉成肉丸。
Shape the left over minced pork into meatballs.

6. 锅中放水,烧开后加入酿苦瓜和肉丸,以大火煮至重新沸腾,转小火炖至苦瓜软。
Bring water to a boil. Add the stuffed bitter gourd and the meat balls. Boil the soup over low heat until bitter gourd is soft.

 7. 熄火前放入枸杞,煮1-2分钟。
Toss in goji and cook for 1-2minutes before turn off the heat.

8. 加入少许盐调味,即可。
Add some salt to taste and ready to serve.
